One thing I miss
from our pre-preschool days is baking with Andrew. So, I made some dough one morning, put it in the fridge and we whipped up some Chocolate Crackles when he got home.
Mama need: met.
Here's the recipe!
4 squares of unsweetened chocolate, melted and cooled a little
3 beaten eggs
1 1/2 cups sugar
1/2 cup canola oil
2 t baking powder
2 t vanilla
2 cups flour
powdered sugar
Melt the chocolate. Let it cool a little so it doesn't cook the eggs. Combine eggs and sugar. Add chocolate. Add everything else except the powdered sugar. Refrigerate until the kids get home from school (at least an hour). Have everybody scoop out the dough with a spoon, form a ball and roll the ball in a bowl of powdered sugar. Your hands will get sooooo messy. Your kitchen will probably get covered in powdered sugar. And your clothes. But, that's part of the fun, right?
Bake at 375 for 8-10 minutes. Don't overbake these guys. Err on the side of underbaking (they become lovely fudgy goodness) instead of overbaking (they become small and pretty bricks).

Wonderful! Don't you love cooking with the boys? Timothy and Patrick and I just made gingersnaps... now I'm already sad for the day they're at school!

It's Sunday morning and I feel the need to bake!
Loved the look of these little beauties earlier this week and so am inspired to fight my way through conversion tables and ingredients that you have that we don't (Canola Oil? What on earth is THAT?!!! we will be using sunflower oil I think!)

canola is just vegetable oil. I think sunflower oil would work fine!
