Gingerbread Muffins with Lemon Glaze






1/2 c butter, softened
1/2 c sugar
2 eggs
3/4 c molasses
1 1/3 c water
2 3/4 c flour
2 1/2 t baking soda
1 T ginger
1 t cinnamon
1/8 t ground cloves
1/2 t salt

Cream together butter and sugar. Add eggs. Add molasses. Add salt, cloves, cinnamon, ginger and soda. Mix it. Add part of the flour and part of the water alternating and mixing until you've added all of both.

Pour into greased muffin pan. I used a mini muffin pan and there was enough batter left over for 6 regular muffins. Bake at 350 for 25 minutes.

Make a glaze by mixing the juice of one lemon with enough confectionar's sugar to get a consistency you like. I wanted the glaze to sit on top of the muffin a little, not sink in, so I made mine pretty thick.

When the muffins are done. Allow to cool a little and glaze.

Susan, nope. this is the old lens. The new lens doesn't do super close ups. It zooms like crazy though. I imagine I will mostly use the new lens outdoors. Honestly, I've only used it a little the first night. Thanks though! Next time I do a Johnston family photo shoot, I'll bring the new one! ;)

They look so delicious and after the success of the Christmas Pretzel cookies - I didn't make that shape I just rolled them into balls and gently pressed the top before cooking. I made 6 batches of those cookies because everyone just ate them up as soon as they came out of the oven.
Now I shall try gingerbread muffins.
