Raspberry Linzer Danishes



I found this recipe in my latest Rachel Ray Everyday magazine. The filling has cream cheese, almond paste and raspberry jam. I've never used almond paste before, and today I found out how easy it is to use too much! This might the first time ever that I've made something I thought was too sweet. These babies are sweet! If I were going to do them again (and I might be tempted to because of how fun they were to put together) I would use more cream cheese and less almond paste and finagle a happy medium.

Though, first we've got to make our way through this batch. And I think that in this family, we can do anything we put our minds to. ;)

Oh, my, Robyn. I'm always only joking when I say that I'm coming over to eat what you've made but this time . . . marzipan is pretty much my favorite ingredient ever. And mixed with cream cheese and raspberry. Oh, my.

How could they be too sweet? How could you ever have too much almond paste? I just don't understand ;)

Love the look of these, what kind of pastry do they use? I have a husband who loves almond flavoured anything! So I will definitely give these a try.

funny guys, because I was seriously in the midst of a minor existential crisis about how I spend my time, especially now that Andrew is in school so much. (Shouldn't I be working from home or something?!?) A good day for cheering on Made in Brooklyn, thanks!

Deb14, the recipe recommends a sheet of puff pastry, but I didn't have any...and I tend to make things harder...so I made a batch of quick Danish pastry last night to rise overnight in the fridge. It's easy to make, and I had everything for it. ;)

Those look really yummy! Is almond paste the same as marzipan? I've never used it before. They really do look very inviting!

I like the Rachel Ray magazine, though I am pretty new to it. I asked for a subscription for Christmas because I had read several issues that I liked. There is a lot I like about Rachel Ray. I like that she is all about getting dinner on the table quickly. That has become more and more important to me since children have joined our dining, but I also appreciate the message in general. I like that someone is pushing for homemade dinners and families eating together, and her giving tips for how to do that quickly makes sense to me. I think she gets a lot of criticism for using canned and prepackaged foods...but I still think her overall goal is a good one.

I use her magazine and recipes mostly for ideas...not to follow them exactly. There is a lot I couldn't follow exactly because she doesn't have much for vegetarians. So, um, I like it! ;) How's that for a hard sell?
