warming up



Today it feels like Spring. There is something fresh about the air and the coat I wore this morning was too heavy. A good sign.

These cookies taste like Spring to me, perfect for this lovely day.



Macaroon Kisses

1/3 cup butter, softened
3 oz. cream cz, softened
3/4 cup sugar
1 egg
2 t orange juice
2 t almond extract
1 1/4 cup flour
2 t baking powder
1/4 t salt
14 oz flaked coconut
chocolate kisses

Mix together the butter and cream cheese. Add in the sugar, egg, OJ, and extract. Mix in the flour, powder and salt and 3 2/3 cups of the coconut. Chill for 30 minutes. Shape dough into 1 inch balls and roll in remaining coconut. Place on parchment paper lined cookie sheets and bake at 350 for 12-15 minutes. Press a chocolate kiss into each cookie after they bake. It makes about 4 dozen.

We are expecting snow tomorrow! So this Spring feeling won't last long. Glad I have the cookies to remember it by. ;)

Don't fret - I hear it'll be warm enough that the snow won't stick. (I hope!!) AND, it's supposed to be in the 50's on Saturday! So make more macaroons! Spring is on its way! Wahoo! ;)
