vegan cupcakes?!?



yup. I did it. Vegan cupcakes.

Last week I told you about my friend Caitlin who is in the hospital recovering from a pretty serious bike accident. I decided I wanted to bake something for her, but her boyfriend is vegan and it just seemed cruel to make goodies chock full of dairy, since he would be one of the recipients of the goodies. I've heard that vegan cupcakes are sweeping the cupcake world, so a google search quickly landed me in good hands.

These were easy to make and got rave reviews from vegans and omnivores alike.

Next up for Caitlin? Vegan brownies, perhaps?

As much as I'm a dairy and eggs kind of girl, vegan cupcakes are the bomb. At my cafe we served ONLY vegan cupcakes and no one could tell. The chocolate kind that are made vinegar are soooo good.

Yum! I keep meaning to try a recipe I have for flourless brownies w/ black beans in them! Not that you are looking for flourless, but you reminded me. (-:

Actually, one of my very favorite chocolate cakes has no eggs or butter. It'd be the gluten free that would be hard to make...

They're not nearly as scary as you'd think, huh!! I remember being completely freaked out about vegan & gluten-free (still haven't broached that one yet!) and when I tried them, it was like... 'Huh. That was fairly easy!' I have a GREAT rootbeer float cupcake recipe on me blog if you're interested! Smooches, Robs!

This actually didn't look too sketchy -- soy yogurt looked to be the only "unique" ingredient. Plus strawberries and walnuts and applesauce? I'm sold! I bet that coconut topping you added was a perfect touch!

Melissa also reminded me that I have a brownie recipe stashed away somewhere that includes spinach!

Though, at what point can we no longer call it a brownie, eh? ;)

I actually add pureed spinach to brownies quite a bit. You barely notice it. I mean, really, a brownie is a brownie. Adding spinach to the sugar and chocolate isn't going to make it healthy. But...I guess it can't hurt!

Looking at the recipe reminded me that regular (conventional) white sugar is not vegan- so weird, isn't it? But it definitely is not.

I like vegan cupcakes & brownies. I only encounter them occasionally but I've always found them to be good. And vastly preferable to the sugar free versions.

Robyn, this is perfect timing! It's my turn to make dessert for our small group, and we have a dairy allergy to avoid.
What did you use for the frosting, to get the coconut to stick? Something with no milk?
