Yesterday I tackled another vegan cupcake recipe. My old college roomie, Mandi posted these on her blog a little while ago and suggested them for Caitlin.
The verdict? amazing! Root beer flavored cake, dark chocolate ganache glaze, lovely fluffly icing! What's not to like?
Caitlin has tried lots of vegan baked goods and thinks that they generally taste like playdough, so when she eats one of these and says "they don't even taste vegan!" I know she likes them. ;)
(Mandi, why are yours darker than mine?!?! I was expecting the cake to look more chocolately- like yours...but they don't! stink. Though, no one seemed to notice.)

Robinski! Thanks for the shout out! I think it was just the lighting and the fact that I dipped my tops completely in ganache where you did this wonderful fluffy cloud thing with yours. Mmmm... :) It's a really good recipe-- I'm glad you liked 'em! Pretty easy, too, eh? :) YAY, VEEGS!!
