messy cobblers

It turns out that 4th of July is a great holiday for a selection of messy cobblers. I cracked out three: cherry, blueberry and peach. I served them in plastic cups with a scoop of ice cream on top. There were a couple of people at the party that had special dietary needs (vegan and gluten free) and with a few easy adjustments (non gluten flour, margarine instead of butter, a banana in place of the egg) these messy lovelies were safe for all.

And I must say, they paired nicely with the other messy foods on hand.

Now in England, that is what we call 'crumble'. Cobblers are cooked fruit layered at the bottom with a layer of thin scones on the top. But whatever we call them, yours look delicious. Could I have a slice of cherry please?
