Farm Share Muffins
1/2 canola oil
1/2 cup unsalted butter, melted
1 1/2 cups sugar
2 T honey
3 eggs
1 T vanilla
splash of orange extract
orange zest
2 1/2 t cinnamon
1/3 cup buttermilk
3 cups flour
2 1/2 t baking powder
1/2 t baking soda
1/2 t salt
1/2 cup chopped walnuts
1/2 cup crushed pineapple (I used 1/2 cup chopped mandarin oranges)
2 cups shredded zucchini or carrot or any combination equaling 2 cups
Mix all of those ingredients together. Grease the muffin tin (I sprayed it with canola oil spray). Put the batter into muffin tin (I used a 1/3 cup measure to scoop the batter). Bake at 375 for about 30 minutes. This makes about 18 muffins. Eat some. Freeze some. Give some away.
So, so good.

For some reason I love the picture of the three muffins. It makes me giggle, like they're having a stand-off, or performing a dance.
These are my kind of muffins! Unfortunately, I have this weird bias against citrus in baked goods. I get mad at the bakery if they've ruined the chocolate biscotti I want by adding orange to it, and I can't stand the thought of the orange chocolate brownies at our burrito place.
They look good for someone else, though!

I don't see a dance or a stand-off. I hear Jaws theme music as the dark, brooding muffin hovering in the background plans its vengeance. Scary, scary muffin! That citrus zest isn't fooling me.
I baked these today and really liked them. The problem is, my husband really loves them!!! He said he could have one for breakfast every morning.. I guess I'll be making them often! Thanks for sharing this...
