stop whatever you are doing



and make this banana bread. Seriously. You will thank your lucky stars that this recipe landed in your lap and that you stopped what you doing to go forth and bake. This recipe is an adaptation from the banana bread recipe in, what else? Passion for Baking!

Robyn's Variation on a Masterpiece
1 cup butter softened
2 cups sugar
4 large eggs
2 cups ripe, mashed banana
1/2 cup sour cream (or I used 1/4 cup sour cream and 1/4 cup plain yogurt because I ran out of sour cream)
2 t vanilla extract
4 cups flour
2 t baking powder
1 t baking soda
1/2 t salt
1 cup chopped walnuts
1 cup flaked coconut

Blend together the butter and sugar. Add eggs. Add banana, sour cream and vanilla. Mix it, mix it. Add the salt, soda, and powder. Mix it, mix it. Add some flour. Mix it. Add the rest. Mix it, mix it. Add the nuts. and, well, you know.

Pour into 2 loaf pans that you have previously sprayed with oil. Bake at 350 for about an hour or until you just can't take it anymore because it smells so good and you just need to eat it already.

Feed it to small, shirtless boys. (I have one you can borrow)

Guess who's got three bananas with Robini's name on them!!?? Well, now that I think about it, you probably do. BUT! I've got bananas with MY name on them & I've been dying to cook something that uses a large portion of super ripe bananas (cause I forget about them & end up with a whole bunch of them- sigh). I don't like my banana bread recipe. This is wildly exciting. I'll keep you posted! :)
